Nose has cooled lemon curd, light apple cider vinegar, cold pineapple, moist moss, oxidized green apple slice, damp clove and very wet grassy notes.

Palate has pineapple core, bruised green pears, faint lanolin, light honey notes, light under-ripe yellow peach and white waxy notes round out the finish.

Double decant with 12H rest. A Saint Aubin for the trending natural wine crowd without being over the top 'natural'. 92-93 Points.

Paired to a grilled slab of Steelhead Trout, perfection.

24H Update:
Nose has fresh green apple peel, warmed yellow apple slice and white waxy notes.
Palate has warm pear, slight honey and under-ripe pineapple.
Much improved; Score change 92>93.

PYCM’s younger brother. The most is a bit shut down for now but solid, mineral-driven with a hint of white florals. The palate is a different story: there’s a chalky-creamy texture that’s hard to explain and to die for, an interplay of supple ripeness and out of bound minerality. The acidity is there to support the conclusion but the taste takes a back seat to the texture. Remarkable even considering the shy nose, would love to drink it in its prime. — 9 days ago

Big, ripe and opulent nose. Peach, melon, bursting and super ripe but not over the top. But at the edge. Gorgeously balanced and high toned. Honey, custard. Lovely. Palate is ripe, concentrated and the acid is just barely ok. Right at my personal edge. But it’s still fresh from intense minerality. Citrus, peach and minerals on the palate. Superb concentration. The mineral freshness gets more and more intense with air. Makes up for the just ok acid. Lovely stuff. Super long finish. Almost a 9.3. — 2 days ago

Racé et élégant, aux notes typiques de la syrah du soleil: poivre, fruits noirs, lard fumé, charbon... corps moyen, finale droite. Plaisir immédiat et rapport q/p correct, bien joué Chapoutier.

I drink a lot of White Rhone and that’s been one of my favorite things about the past 9+ years of Fass Selections. I didn’t before and now I realize that I have a passion for them. Nice to find a new wine category late in your wine drinking life one loves. Anyway this is beautiful. Nose is ripe yellow fruits, beeswax, gorgeous compactness and minerals. It’s really refined as well. Palate is ripe, unctuous and juicy but I’ll admit off the bat it’s showing it’s alcohol but it will integrate. It’s only 13% but that’s why you let white Rhone breathe. For the alcohol to integrate. Luscious and juicy. Deep but I’ll be back for when it’s integrated. It’s a solid 9.0 now but the finish, texture and depth suggest this will be wonderful in an hour.

9.0 to 9.2. Alcohol almost fully integrated in 10 minutes. Custardy now. Great length and terrific minerals.

Vintage 2019 | a favorite producer of mine. 100% Cabernet franc, vines 25 a 40 years old. Bio wine. It is so much fun to taste the difference between Saint Nicolas de Bourgueil and for example Saumur Champigny. Pop and pour. Frivolous raspberry bouquet, gains expression with aeration. It’s not the power that catches the eye, but finesse and elegance. Medium weight. Lovely now, paired with ostrich stew and mixed vegetables from the oven. Happy. — 6 days ago

2022/5/15 with shellfish porchetta, straw-seared bonito carpaccio, etc. Lemon meringue tart, cold butter, iodine and peat smoke on the nose; the palate follows suit, with a nice blend of mineral, acid and sweet fruit elements. In my most recent safari of (relatively) reasonably priced white Burgundies, this is a good one. — 7 days ago
