Concrete fermentation 6 months + 1 month stainless. Bright, white flowers, peach, honey, nectar. — a year ago
Sweet and sour, honey nose, pineapple, acidic but balanced. — 6 years ago
Watermelon, green strawberry and lots of flowers. Honey. Pepper on the back end. Really nice. — 6 years ago
Nose of delicate oak, Meyer lemon, and bee pollen. The pallet hits with a rush of acidity, minerality, and that sweet Meyer lemon again, almost like a lemon sorbet, with a ripe pineapple finish and honey. The more it sits the more complex it gets. Quite tasty with the Louisiana style roast chicken I’m eating. Yum! — 7 years ago
A superb Chardonnay! Aromas of Anise and Honeysuckle. Apple and Honey on the bud. Crisp and smooth with a long finish. Great with our Salmon tonight. Need to order more from Evening Springs as we were extremely impressed with their wines when we visited earlier this year. — 7 months ago
Apricot & honey on the nose, body creamy & rich with good mouthfeel and long finish with a note of hazelnut at the very end. This 10 year old held up extremely well — 7 months ago

Nice meeting Paul Lato and talking about his wines.
This Zotovich Vineyard offering is delicious young but, will evolve into even greater pleasure in 5-6 years.
The body is full, round with beautiful texture. There is nice mix of perfectly ripe red & dark fruits with excellent blue fruits that hover around the plate. Gentle, soft wood use and subtle baking spices. This bottling walks the tightrope of Burgundy with its perfect waterfall acidity and round, soft structure and has Californian well ripen fruits.
He is one of few Southern California producers that doesn’t over extract and brings out those wonderful blue fruits I love in good Pinot Noirs.
Paul’s cousin was also nice to pour us a glass of one of their 2011 Chardonnays that was really beautiful and drinking at its peak. I didn’t get the vineyard designation as it was at the end of the event and security was being aggressive about clearing the hall. But, again, a beautifully textured Chardonnay that was round with beautiful fruit, great acidity and just the right amount of heather-honey notes. 9.5 on the Chardonnay. — 7 years ago
Light gold in color.
Nose of citrus, apples, light earth, oak, herbs, light sea salt, spices, light honey and minerals.
Medium plus in body with medium acidity.
Dry on the palate with limes, light grapefruits, herbs, oak, light toast, sea salt, tangerines and white pepper.
Tangy finish with limes and grapefruits.
This young Chardonnay from Oregon is starting to drink nicely now. Showing nice complexity and good balance. Feels like a fruit forward white Burgundy. Elegant and spicy.
Good right out of the bottle, and better after 30 minutes of airtime.
Tangy, interesting and better when not too cold. Soft and smooth.
This Single Vineyard Chardonnay will continue to age nicely in the next 7 years. Has good potential to become a 93 point wine.
A good sipping wine that will also pair nicely with food.
100% Chardonnay grapes were aged in (20% new) French oak barrels for 14 months. A small production of only 287 cases.
13.1% alcohol by volume.
91 points.

Lemon, honey comb, marzipan, good acidity, oily, a bit creamy, tasty. I’d drink now. Why wait? — 5 years ago
Green apple (maybe peach) and honey suckle on the nose. Thick mouth feel. None of the Stoney, flinty flavor that you associate with Oregon Pinot Gris. Well balanced, almost off-dry, with strong residual sugars. From our honeymoon collection (2012). — 6 years ago
Inspired by the golden hills that frame the landscape of San Bernabe Vineyard at the southern edge of the Santa Lucia Mountain range. Deep color with berry fruit aromas and notes of toasty honey scents. On the palate blueberry and cherry flavors with vanilla, cacao and toasty notes. Smooth tannins balanced well with acidity, lingering ending with espresso and spice character. Nice value. — 7 years ago
Golden with aromas of fruit and toasty creamy oak spice. On the palate pear, apple and honey with hints of peach and citrus notes and nice round oaky tones, showing its age. Medium+ finish ending with a sweet creamy mineral edge. Don’t wait any longer on this one! — 7 years ago
