First taste!? Mature with a bit of bricking but still nice solid color and bouquet of mature red fruits and earth. Velvety and enticing on palate. Excellent with Evan’s Shanghainese pork belly. 51/43/4/2 Merlot/Cab/CabFranc/Petit Verdot on label from Bernard Magrez touting same attention as his Pape Clement, and long history dating back to 1120. Importer label says 37/55/6/2 instead! (Oldest in Medoc, 1400 by house of Foix loyal to King of England. 1486 Camet new owner. 1500s by Michel de Montaigne.) — 25 days ago

Nina recommended this bottle to me. The label says dark and jammy with toasty vanilla notes, and I can actually taste all of that. I think I can also taste or smell the bourbon whiskey barrels that it is aged in. Very fruity and delicious but a little sweet for my tastes.  — 3 years ago

Had this Margaret River icon on Christmas Eve with a nice grass fed Rib Fillet. A dusty blackberry nose. Not as herbal as the usual Moss Wood Cabernet. Full bodied from a good year with a long long future. Huon Hooke says to 2040. More reminiscent of a Cabernet from the eastern states in flavour profile. My first of 6. Deep ruby in color; graphite, black pepper, and cigar box on the nose; as it opens up, I'm getting a little black cherry on the nose; high acidity; medium plus tannins; tastes like crushed gravel, blackberries, and black olives with a long finish. Wonderful nose, toasted almond, sherry, lemon, ripe pear. Oxidation is just right- not overwhelming, but adds to complexity and character. Slightly orange color, full bodied. Would love to know actual alcohol, label says 11-14%, but tears indicated higher alcohol, but very well balanced. Disgorged 14 November 2019. — a year ago

Beautiful presentation. Stats below but this is for me now a classic Yamaha rice / Hiroshima sake. The flavors line up with the last couple I’ve had and while a bit sweeter and heavier on the palate it’s very similar. The sweetness hides a bit of the alcohol and the color is clear as water. The aromas are light and I suspect that’s due again to the age of the sake. The box label (under the US label) says the bottling date required by Japan law, is on the bottle. Unfortunately there is no Japan label on the bottle, only a US one, which has no date. Yesterday’s SMV I think was a -2.5, so I’m putting this at a -3.5 and I really want to say -4 but the acidity is probably the difference. As it warms you get more alcohol and a little bit of bitterness imho. With air, I bet that would go away like the others did. Editing my score down. As it warmed and I had more, I found it cloyingly sweet. — 5 months ago

Release Day Virtual Tasting! A dark ruby color and a nose that says black plum and cherry plus some earth or maybe a hint of leather or tabacco. Smooth at first and then strong dryness, earthiness, mineral and tannins. Leaves some chalky aftertaste (not objectionable) which with more air smoothed out to strong tannins. Would like to have this again in 3 to 4 years. Note- at 45 mins in a glass the taste was much smoother and really great with some clear spice flavors and less tannins. — 4 years ago
