My two-day Pork Chop marinade. I have found the Long Shadows Poet Leap to be the perfect pairing.
Here is the recipe. Try it sometime.
4-6 thick cut bone-in pork chops
- 1 cup hoisin sauce
- 1 1/2 tablespoons of sugar
- 1 1/2 tablespoons of Tamari soy sauce
- 1 1/2 tablespoons sherry vinegar
- 1 1/2 tablespoons of rice vinegar
- 2 scallions chopped
- 1 teaspoon Tabasco Sauce
- 1 1/2 teaspoons of Lee Kim Kee brand chili sauce
-1 1/2 teaspoons of ginger finely chopped (I triple this)
- 1 1/2 teaspoons of garlic finely chopped (again.
I double this)
- 3/4 cup of cilantro finely chopped (no stems)
- 1 tablespoon of sesame oil

Merry Christmas 2025! 🎅🎄🎁 🍷 ❄️ ⛄️
23 yrs since birth and 21 yrs in bottle and the evolution is beautiful. Perfect w/the ribroast.
Fruits still holding with excellent integration. Blackberries, black plum to pudding, strawberries, raspberries, black cherries, sandalwood, soft, dark spices with gentle heat, mocha powder, some milk chocolate, caramel notes, understated graphite, anise to some black licorice, gravel, dry stone, used tobacco & leather, mid berry cola presence, dry twig, moist clays, red, dark florals with a violet frame, excellent acidity, well; made, balanced, tensioned, structured with an elegant finish that lasts nearly two- minutes and falls of soft earthiness & soft spice. — 4 months ago

‘01 is drinking beautiful in ‘22. Primo. 21 years old is drinking age, how about that?
This wine has aged beautifully and remains strong. Dense and rich, but soft and supple. I’m leaning heavily into the current and jammy notes that remain, but the obvious flavors are the old leather, tobacco, and sage.
Color comes out dark ruby red, but after about an hour in the glass you can see the oxygen taking hold. No decanting required. Glad I bought two of these! — 4 years ago

Dark ruby in color with a wide reddish rim.
Pretty nose of black plums, currants, oak, licorice, spices, chocolates, tobacco leaf, herbs, cola, light earth, black tea and black pepper.
Medium plus in body with medium acidity.
Dry on the palate with black currants, plums, cooked cherries, oak, spices, chocolates, earth, tobacco leaf, herbs, peppercorn and licorice.
Long finish with fine grained tannins and tangy raspberries.
This is a delicious 14 year old second wine from this Second Growth château. Fruit forward and elegant. Rich and expressive.
Although not from a great vintage, it is drinking beautifully now, and will continue to age nicely in the next few years. Would be nice to revisit it in 3 years.
Nicely balanced with a soft mouthfeel. Complex and interesting. Good by itself or with food.
A blend of 65% Cabernet Sauvignon, 21% Merlot, 13% Cabernet Franc and 1% Petit Verdot. Aged for 14 months in (15% new) French Oak barrels.
13.5% alcohol by volume.
92 points.

Good semi dry bubbly. Loved the tiny bubbles, holds up well. Not too sweet — 3 years ago

Great Pinot , tastes like it from Burgundy. Red fruit, not sweet, white pepper, light tannins. Very well rounded. Did not get the mushroom forest nuances that others are describing. — 14 days ago
