Occam's Razor

Continuum

Napa Valley Cabernet Sauvignon Blend 2012

Happy Thanksgiving!!

Overrated and overpriced. 1+hr decant, probably needed more. Very hot nose with plums. Massive tannins and hits the palate like a razor blade. Earthy with plums and prunes. Not my style. Medium depth and finish.

Anyone want my last bottle?

@Paul J : Just checked my CT notes and I opened this ‘12 almost two years ago and it was corked. Was hoping I could give you some hope but my only experience was flawed!

Yeah, the Continuum's always run lean and spicy. Like zero percent body fat. Nothing to grasp...a sheer red/Cabernet cliff that few can climb.

My experience with this wine was the complete opposite. I have a few 07’s kicking around and they were plush and dense when I last took a look…

I find myself between scores on this wine, but the reason I’m pushing it to 91 is because it showed better (for my preferred taste) on day two, suggesting more time in the cellar could slightly improve this. To me, this is almost totally Chablis like, though it’s just missing a hint of steeliness. Lemon oil, honeysuckle, and crushed rocks on the nose. Day 1 showed razor sharp acidity...electric like. Day 2 it became a touch more rounded. My first remark about this wine to someone was “it’s like licking fresh squeezed lemon juice off of limestone”. Tart, vibrant and definitely best with food. Day 2 added some stone fruits and a touch more sweetness to the finish. My thanks to @David T for introducing me to this producer, who I’m starting to hear about more and more often. — 6 years ago

a wow wine. What do you want in a wine? It’s here. Lemon zest, minerals, acidity and lift, great intensity, super young wine that will last decades and has room to improve. Like licking the edge of a razor blade dipped in sweet lemon. — 8 years ago

Medium gold. Bright in the glass. Strong nose. Notes of apricot, petrol, pineapple and river stone. Razor sharp almost painful acidity in the mouth, even after a few hours of air. Chewy and big finish. This needs more time. — 8 years ago

Weingut Tesch

Karthäuser Riesling 2015

Tesch does it different. Not the usual Riesling notes of citrus and green apples. This goes in the opposite direction. Big and bold notes of petroleum, honey and almonds. And heavy razor sharp acidity. This wine is not made to please everyone, despite being the entry level wine from this producer. If this is what you get for 16 Euro’s I can’t wait to try more from their selection — 8 years ago

Domaine de la Pépière

Château Thébaud Clos des Morines Muscadet de Sèvre-et-Maine Melon de Bourgogne

The last bottle of one of my favorite wines. Ocean side smell of salty waters and shellfish. Fresh green herbs, lemon lemon lemon and a very mineral driven finish. High intensity wine with razor sharp acidity and a pretty long lingering finish. 13 years old but I guess at least 5 more in the tank… purchased some 15, let’s see how those work out soon. — 3 years ago

Estate Napa Valley Sauvignon Blanc 2018

Finally getting around to posting wines from my annual Napa trip from two weeks ago. Always goes by quick! Lots of fun new stops this year.

We returned to Hourglass after our visit in 2018 as the wines are just so enjoyable, but the tasting cave may be one of the coolest spots to enjoy a glass of wine.

I’ve had many vintages (and bottles) of this and it’s always consistent. In an age of “super SauvBlancs”, this toes the line between old school and new school. Lots of grass, little bit of grapefruit, lemon lime candy and minerality in the nose. It gives way to more lemon on the palate, waffling back and forth between oak or steel with high acidity and a slightly rounded profile on the finish. I like this SB a touch warmer than others as the acidity can be razor sharp when it’s cold. Great for the price.

Brut Rosé Champagne Chardonnay Blend

Finally a night or weekend we weren’t working on our rental, rushing to get some Christmas shopping done or getting ready to entertain holiday guests. It’s a night for us to chill out. That’s a good thing. It is also our final night to enjoy all our Christmas candlelights before we pack up tomorrow. 😔

We didn’t even enjoy any of one our very favorite N/V Rosé Champagnes over the holidays.

Tastes really good tonight. Showing shades of carbonated Dreamsicle or Creamsicle. However, you remember them growing up. Rich, ripe, candied & lean; black cherries, strawberries, cherries and summertime leaner watermelon. Baguette, grey volcanics, sea spray and finely powdered, razor sharp chalkiness with candied, pink rose pedals. Perfect, crisp, lively acidity and long, rich, well polished & balanced finish with persistence.

Hope you all have had a great start to 2020!

What a nose. It pops. Big peach and apricot and that purest citrusy syrup dash of honey thing. Really singing. Slate in the background but beautiful and clean fruit. Floral and almost a nougat element as well. Stunning. Palate is at once opulent and also bone dry with razor sharp 2008 acidity and cleansing minerality and citrus on the finish which really is long and delineated. This is outrageous now. — 8 years ago

signature PYCM on the nose, reductive minerality, honeysuckle, white peach and peach blossom. On the palate, lots of floral undertones, a hint of toasty oak and a ton of minerality. Outstanding but short of the razor acidity of en refills, maybe due to the warmer vintage — 4 years ago

Brut Blanc de Blancs Champagne Chardonnay

I’m between a 91-92 (same as I was for the Brut Reserve). After going through 6 of these and 6 brut reserve over the last year, I feel confident in the longevity of these Blanc de Blanc champagnes.

For a Blanc de Blanc, this shows plenty of yeasty/toasty notes with fleshy characteristics. Sea salted flaky honey buttered biscuits with lemon scone and honeysuckle aromatics. While the palate is similar, the finish is so drastically different than the rest of this champagne…almost too tart. Palate profile is rich with yellow fruits, kiss of nougat, and some classical limestone. The finish is just crazy underripe and again, tart. Razor sharp acidity. I think this is a champagne that benefits from time, whereas the Brut reserve is perfectly fine to consume now.

Young but boisterous. Big confectionary nose of citrusy, confectionary sugar, melon, huge mineral and a deep elemental feel. Super terrific nose. Palate is razors and wonderful sappy fruit with that razor acid with brilliant juiciness and purity. Terrific depth. So long and has structure to age. Joyous. — 8 years ago

Christmas Eve, my wife and Krug Rosé...not sure it gets much better. On the nose; ripe, effervescence fruits of black cherries, ripe strawberries, black raspberries, watermelon, sea spray, soft chalkiness & minerals, red & pink fresh roses & baguette crust. The palate is soft, ripe, lush & delicate with micro bubbles. Fruits of perfectly ripe; black cherries, ripe strawberries, black raspberries watermelon and notes of citrus. Sea spray, powdery soft chalkiness & minerals that softly cut across the palate like a razor, red & pink fresh roses & baguette crust, perfect acidity and an amazing long finish. Beautiful stuff!
