Tasted blind. Beeswax, green apple, tilia and honey. After some time it becomes magnificent, bouquet enriches by honeysuckle and amber with some musk notes. Energetic, crisp and well balanced with high acidity. Lovely long aftertaste that evolves over time. It was the most interesting wine of the evening, no wonder it was named favourite by most of the people. — 5 years ago
Served this slightly chilled (12’C?).
Gorgeously fresh and pure dark fruit. Succulent, juicy, still primary….
Tannines and alcohol beautifully blended into the dense and viscous core. Only a slight hint of spice, chocolate and licorice now. Sweetness and freshness in excellent balance. It even feels more fresh than sweet at the moment. Certainly not too heavy nor intense.
This is so forward and yummy and sexy right now… I just don’t miss the complexity it might be lacking at this stage.
Sure, it has a few decades of life left and it could get more cerebral and complex…

Non fortified Palomino from Jerez aged for 8 months in barrel under flor and bottled at 12% abv.
Clean, medium + intense aromas. Opens up with acetaldehyde, fermenting bread dough, and crushed almonds. The fruit entries with lemon juice and yellow fresh apples with a present chalky and sea shell, salty minerality. Fresh acidity, drying chalky texture, flavours of lemon juice, nuts, chalk and bread dough, linear mid palate and a good but not impresscive finish — 5 years ago
