I chose this to pair with Cantonese roasted duck and it worked nicely as the brisk acidity match fat and saltiness really well.
Lime, chamomile, candied lemon peel, and wet slate to go with subtle petrol note. There is hint of sweetness from dried fruits and honeycomb on the palate with medium body and a long, saline finish. — 4 months ago
Wow, medium yellow color, very nice floral apricot honeyed with just a hint of that petrol underneath, with a light lithe texture into a bit more acidic finish. 8% ABV. Must have aged well since last time, last one unfortunately — 20 days ago

Needed 30 minutes but what it really needed is 24 hours and it’s getting that. Will report back later. Ahh yeah. 24 hours later this is stunning. Elegant and aristocratic. The sheer class of this is so impressive. Nose has lime zest, vanilla extract, and palate has that 10% opulence hit that just soars into the jagged juicy edges of the finish. 9.5 to 9.7 overnight.
