This is a blend of Pinot Auxerrois, Chardonnay and Pinot Gris. You know as soon as you taste it, it’s not the three traditional grapes associated with champagne or sparkling.

Lemon, lime pulp w/ zest sprinkled in, some beeswax, green apple, tropical melons with some honey dew rind, pineapple juice, cream that is slightly whipped, sea spray, some sea fossil notes-oyster, understated white & chalk, volcanics, limestone, bread dough notes, yellow lilies, spring flowers, round acidity with a decent finish that is highly polished & leans more into fruit as it sets. — 18 hours ago

Quite deep , copper tinged lemon colour . Fine vigorous perlage. On the nose buttered pastry , chalk dust , red apple , cranberry , hints of lemon peel . On the palate good volume with some light red fruits , red currant and cranberry complementing the , chalk tinged , lemon hints . Medium bodied, quite fresh and linear, mineral tinged with decent length . Well made and gastronomic in style , this has enough body to go with a range of foods . Drink now — 6 months ago
