Vintage 2021 | each time I drink this Gini Soave I am happy. It is beautiful: a good structure, minerality, lots of bitters. This is the first time my teammates recognized the Soave tasted blind. A nice golden color with a tart aroma of apple-lemon and minerality. Flavors of minerals, chalk, smoke, and flint. It also has a slight salty taste. Quite nice. — 7 years ago

Medium bodied and a green/yellow color indicate some softening, but the wine itself is very green and fruit forward, green figs (but just the vegetal smell), with some acidity and notes of yellow fruit rind, crisp mountain air, grassy notes, and a slight baking note, like pastry, hidden away underneath. Palate is crisp, dry, with a balanced acidity, lots of limestone, crisp yellow fruits, maybe some yellow grapefruit, celery hints, lemon juice tartness, and an emerging grassy energy that starts to swell long after the sip is complete. Pleasantly floral and fresh, the 2021 Soave Classico opens with a blend of spring flowers, lime and melon. It's silky and round on the palate, slightly oily in texture, with crisp orchard fruits and juicy acidity to balance. Médium lemon yellow . On the nose this is quite ripe and slightly tropical with pineapple , peach , ripe citrus , touches of creamy oak and blanched almonds . On the palate this is very well balanced with that a creaminess with good extract and fresh acidity , yellow fruits , lemon , peach , apricot, some herbal , floral hints too . Balanced alcohol and a lightly toasty finish , with good textured length. This is really quite young and will repay moderate ageing , better in 3-4 years and will last well a further 5-10 . — 11 days ago
