The complex 2020 Savagnin Côtes du Jura Cuvée du Professeur unwinds with prominent notes of saffron, dried chamomile, ripe pear, yellow apple and a touch of jasmine. Powerful and concentrated, the 2020 is a transparent reflection of the warm vintage, but the steely acidity cuts through like a scalpel, flawlessly preserving freshness. Matured for 42 months in 300- and 400-liter oak vessels, the 2020 Savagnin Côtes du Jura Vigne Aux Dames is alluring. Precisely sculpted lemon peel, yellow apple, chamomile and a dash of dried blossom are front and center. Vibrant and tensile on the medium-bodied palate, the 2020 is alive and kicking. Last had 2 years ago and the age has been good to this I think. Pours a deep inky indigo. Dark fruit and some olive brine with integrated but present tannins. Mouth coating. Nice acid and a long finish. Really quite delicious and certainly an excellent value. — a month ago
