Black Dragonfly Kurotonbo Kimoto Junmai

Izumibashi Black Dragonfly “Kurotonbo” Kimoto Junmai. This is Kimoto style sake which if I understand correctly refers to how they prepare the Koji mold. Color has a slight yellow tint, less than straw-like. I get almost nothing on the nose. The weight is slightly heavier than water and I’m guessing +2 but I don’t have this calibrated yet. Slight bitterness on the palate as it warms, was what I would call sweet initially. Finish lingers for a long time. Will be interesting to hear the pro comments. Not sure on the rice. — 2 years ago

Like their website. They don’t put a date on the bottle so I can’t see how old. I’m not getting any aroma today either. I get what I’m calling a nice rice flavor. Agree with the palate. It’s balanced with good acidity. +7 is surprising and the acid or chill must be throwing me off. It’s light and close to water weight in my view the later rating of 5 I would believe, not sure why there are 2 values. Evidently dragon flies refers to them flying over the waves of rice fields but also that they can not go backwards - always push forward is their motto. > This Kimoto Ginjo has a rich body, well-balanced acidity, and strong umami flavor. Umami is the aftertaste, which is a balanced richness from both bitterness and sweetness, and a smooth acidity, Yogurt and sour cream flavors can be detected in the long, lingering finish.

Color of grayish purple, quite clear with a bit orange note. Nose is balanced fragrance with dried strawberry, spice, tobacco leaves, cured meat, and more sweet berries. Taste is light, and follows the nose, right amount of acidity and tannins, zest, just a bit sweetness shows her subtlety, more cured meaty note dancing with the berry note. Aftertaste shows backbone of tannins, medium long with savory spice, acidity and sweetness. Pretty good. — 7 years ago

WOTN - I was impressed - besides always being a crowd pleaser this wine always acts like the postman and always delivers

1 hour decant - was not planning to open but we drank the other bottles like thirsty sailors after 90 days on the boat - color has not changed - the smell has gotten even better - the finish was spot on and the taste was impeccable- remarkable- memorable- a true stunner - blue fruits dancing with black and reds fruits - tobacco cassis sweetness from caramel- tamed but striking how this baby keeps growing - drink now if you want but I will not try again for 5 years or more - this Napa cult classic will last 10 years plus and seems to find a way to get better - bravo
