Red Mountain Cabernet Sauvignon 2021

It is time for my #FridayCabernetfix.

Deep purple in color with a purplish/ reddish rim.

Fruity nose of black currants, cooked plums, licorice, oak, light vanilla, spices, dark chocolates, herbs, coffee and light earth.

Full-bodied and bold, with medium acidity and long legs.

Dry on the palate with black currants, plums, cooked cherries, spices, oak, dark chocolates, coffee, peppercorn, spices and green tea.

Long finish with fine grained tannins and tangy cherries.

This is a delicious Cabernet Sauvignon from Red Mountain in Washington State. Elegant and fruit forward. Rich and extracted, chewy and spicy. Nicely balanced and complex, with a nice mouthfeel.

Good right out of the bottle, and better after 2 hours of airtime.

Still young, but already very approachable, and will continue to age nicely in the next 10 years.

A great sipping wine that will also pair nicely with a big piece of steak.

A blend of 96% Cabernet Sauvignon and 4% Cabernet Franc. Aged in all new French oak barrels for 20 months.

Super concentrated & quite aromatic. Salty beach pebbles, ripe apricots, but also a bit of salted caramel, tarte tatin and a lot of rocky, salty minerality. Intriguing.
Quite unctuous & rich on the palata, but also very fresh - zingy acidity, salty minerality countering the richness. This is definitely a food wine… but such an interesting one. Not everyone’s cup of tea but I love it!

Overview
100% Assyrtiko from selected mountain vineyards on Santorini, grown in the island’s arid, volcanic, low-yielding conditions. This is a particularly graceful expression of the variety—less about sheer intensity and more about finesse, freshness, and that unmistakable Santorini personality.

Aromas & Flavors
Fresh lemon, citrus peel, green apple, and delicate white fruit, with subtle herbal notes and a distinctly stony, volcanic character.

Mouthfeel
Light- to medium-bodied, agile, and beautifully vibrant. Crisp acidity drives the palate, while pronounced minerality and a subtle saline edge add dimension. There is even a very distant suggestion of fizz that gives the wine extra energy without distracting from its refinement.

Food Pairings
Grilled octopus, fresh fish, oysters, shrimp, Greek salads, lemon-herb chicken, or simply grilled Mediterranean vegetables.

Verdict
One of the most delicious Santorini Assyrtikos I’ve tasted recently. Delicate yet expressive, mineral-driven without becoming austere, and wonderfully refreshing. It captures Assyrtiko’s serious side while remaining incredibly inviting from the first sip.

Santorini’s Assyrtiko vines are traditionally grown in basket-shaped kouloura, protecting the grapes from the island’s fierce winds and intense sun. Many vineyards are also ungrafted, rooted directly into the island’s volcanic soils.

A little Santorini jewel. The finesse grabbed me immediately, but it’s the combination of stony minerality, salinity, freshness, and effortless energy that makes me want this in my cellar many times over.

98 was not a great vintage and why Giacosa bottled the SS as a red label has long been a bit of a mystery. There’s a lot in this wine to like, and no reason to leave it sitting in the cellar. Fully mature, ample bricking, softer but still lively fruit, rich mouthfeel with classic sous bois, a bit of iron, red berry and herbal overlay, and soft maybe a bit overripe tannin.
