Amontillado by one of the leading producers in the Montilla-Moriles appellation (therefore made with Pedro Ximenez, as opposed to Palomino). About 25 years old - 12 years of biological aging under flor followed by another 12 years of oxidative aging. Aromas of caramel, orange peel, hay, some toffee. Dry, sharp, saline, long finish with intense notes of roasted hazelnuts — 3 years ago
Popped and poured; enjoyed over the course of one week. The 2011 pours a deep, burnt sienna color with a near opaque core; high viscosity with no staining of the tears. On the nose, the wine is vinous with notes of dried dark fruits: sukkari dates, fig jam, Nutella, Gebrannte Mandeln (those German candied nuts that are so delicious). On the palate, the wine is sweet with medium- acid. Confirming the notes from the nose. The finish is long and almost cloying but thanks to the complexity and balance, it works. Like a boozy liquid, high quality Christmas fruitcake (if such a thing existed), this can only be appreciated in small portions otherwise you’ll be diabetic in no time. Well stored examples can be enjoyed now and over the next 100+ years (that’s probably a conservative estimate). — 6 months ago
Very old fino by a historic Montilla producer - with about 12 years of aging under flor in the solera system. Intense nose. Full-bodied, rounder than most Finos from Jerez (made with Pedro Ximenez, instead of Palomino) — 3 years ago
100% Pedro Ximenez from vineyards in Moriles Altos, one of the top areas within the Montilla-Moriles appellation. Vines are rooted in albariza (tosca hojaldrada) soils. Aged for an average of 3 years under flor in the solera system and bottled en rama (unfiltered). Intense nose with notes of toasted almonds and yeast. Sharp, very dry and saline on the palate. A very powerful and sapid, quite persistent wine. Umami 💣 — 3 years ago

Tainted gold color. Strong floral, borderline pungent nose; little bit of desert rain in there. The palate is bone dry, medium alcohol, medium acidity, full bodied; carries lots of umami, white mushroom, unctuous, tannins, and a strong finish. Paired with salmon sashimi with olive oil and salicornia. Pairing was delightful, wine all on its own will develop your character. Cheers. — 2 months ago
