Straw hue. Nose of white flowers and orchard fruit. Fresh pear, apple, peach, and cantaloupe, honeysuckle, white lilies, honey, and wet stone on the palate. Dry. Vintage 2017. ABV 13%. Works well with the spiciness and heat of the chili. Spent considerable time thinking about what best to pair with chili, from a wine perspective. Glad we chose this one, but second choice was to pair with a Southern Rhône, Grenache-based blend, which leads me to this question: what wine do you think best complements chili or a red-meat dish with Mexican spices? Pale yellow. Flinty, firm, 'mineral' citrus oil, petrol. Bracing acid, slightly bitter/phenolic, feels very fresh for a 6 year old wine.

Tangerine honey, grapefruit sugar, with peonies, the most perfect, spun cotton candy, chamomile, pear and apple and almond and hazelnut, chutney, and toast with a nano marmalade containing frozen peaches. The exquisite peach blossom honey, chamomile, sultanas, elderberry, gooseberry, quince, dried starfruit and lime. Notes of dried orange peel, apricot marmalade, mango sorbet, honeycomb, honeysuckle, cherry blossom, stargazer lily, and peonies; smooth, and rich mouthfeel with a long finish. Definitely on the sweeter side. But wonderfully paired with a spicy Thai coconut soup and I suspect a versatile option for a myriad of spice- or heat-oriented dishes. Also could pair well with a dessert such as meringue, fresh raspberries, and sorbet...Vintage 2017. ABV 7.5%.
