Manages to be bright with moderate acidity and still have a waxy last taste to it. Bright straw and slightly under ripe gooseberries, slightly under ripe raisins, persimmons. It has the tart and the acid hit a good golden flavor that has enough sugar developed to not be just bitter. Smooth and flowing, not very viscous, considering the waxy flavors to it, but overall a definite winner, especially in combination with avocado, garlic, pita bread, and all sorts of grilled meats, al pastor style.  — 4 days ago
