Here we are again. It’s a 2004 rose and this is just amazing. Why oh why did I just buy a case of this and not more? Shame on me. This is a spectacular champagne that keeps over-delivering — 5 months ago
I’m at 92-93 here, but this is absolutely going to improve. I should have bought more than just a couple!
Paul Dethune champagnes are quickly becoming a favorite of mine. This cuvée is 50/50 (Pinot noir/chard), with 30% coming from their Solera dating back to the 70s.
I’ve said that I feel Petit & Bajan are the equivalent of Bollinger Special Cuvée in grower form, but I stand corrected. THIS is Bolly SC with a grower champagne vibe. Gold in the glass. Aromatics of lemon cream, lemon croissant, golden raspberries, and honeycomb. On the palate, it has the toasted Bolly profile but it’s dialed back a touch…feels more focused. Less expansive, but there’s added power here. Beautifully balanced with the sweet (the fruit, not the dosage) and savory (honey roasted cashews, sea salt). Imagine Bolly SC and a CHeidsieck Blanc de Blanc…you’ve got this. Loved it. — 2 years ago
We visited Champagne Ayala today, located in the grand cru village of Äy, Champagne. 🇫🇷
This champagne house is now part of the Bollinger family 🏠 ; it has a distinct and marked personality, leaning especially towards Chardonnay with a light, elegant, and focused character. 🌸
We had the pleasure of touring the grounds and cave with @carledmundsherman where we learned about the history of Ayala, the subsoils and topography where grapes used to make this wine were grown; we rode an elevator with crates of bottles that had been riddled, and we even caught a glimpse of wines being disgorged, dosaged, and corked in action. 🤩
It was a memorable, educational, and delicious experience. 💕Here is a lineup of wines we tasted - mostly blends of predominantly Chardonnay (with Pinot Noir and Pinot Meunier) and a Blanc de Blancs (100% Chardonnay).
All of these wines were lovely, though our favorite was the Vintage 2012 La Perle — ‘The Pearl’ — prestige cuvée, due to its richness, aromatics, and complexity. 👏👏👏🍾🍾🍾

Been resting for a decade. Very delicious!!! — 2 years ago
Quite light straw colour , very fine persistent mousse . Quite discreet on the nose at first , then camomile , white flowers then deeper yellow fruits, brioche and citrus peel . More yellow fruits on palate , citrus peel. Dense , broad shouldered and mouth filling are all adjectives that come to mind but all balanced by good acidity, tension, plus lots of backbone . More mineral with slightly toasty brioche touches on the finish, good length , though not as long as the Bollinger Grande Année 2014 had last week. Really young , needs time but shows it’s quality . Better in 7- 10 years , I would imagine , will plateau for a further 10 at least — 3 years ago

Very pretty color of peach with a salmon hue.
Strong nose of apples, citrus, peaches, yeast, light bread and minerals.
Medium plus in body with medium acidity and tiny bubbles.
Dry on the palate with raspberries, over ripen strawberries, apples, limes, yeast, sea salt, brioche, spices, minerals, light earth and cardamom.
Long spicy finish with limes and grapefruits.
This 14 year old Rosé Champagne is drinking beautifully already, and will continue to age nicely in the next 10 years. Elegant, spicy and rich. Fruity and nicely balanced, complex and engaging.
Wine Spectator 96 points. Wine Advocate 95 points.
Good right out of the bottle, and better when not too cold.
A great sipping wine that paired beautifully with my Tuna Avocado Tartare.
A blend of 67% Pinot Noir and 33% Chardonnay, with 5% red wine. Disgorged in 2020.
12% alcohol by volume.

Last bottle find and loved it. Super well rounded and delightful champagne. Nice and dry. Agree with another poster who compared it to Bollinger, but better. — 3 years ago
This is a delicious Vintage Rosé Champagne from a great vintage.
Showing lots of bread and yeast notes, citrus, over ripen apples, spices, minerals, white pepper, sea salt, light earth and herbs.
Medium bodied with medium plus acidity, and nicely integrated small bubbles. Just the way I prefer it.
This 15 year old is very tasty now. Nicely balanced with lots of complexity.
Thank you John for sharing this with me.
Good by itself or with food. I didn't need anything but a nice glass with it.
