Herb Lamb Vineyard Cabernet Sauvignon 1993

Popped and poured; enjoyed out of red Solo cups over the course of a few hours. The 1993 “Herb Lamb” pours a deep garnet/purple with an opaque core; medium+ viscosity with moderate staining of the tears and significant sediment. On the nose, the wine is vinous with heady notes of mostly ripe and some desiccate fruit: black currants, blackberries, black plum, a mix of red and purple flowers, tobacco, Poblano pepper, leather, cocoa, some tilled earth and fine baking spices. On the palate, the wine is dry with medium+ tannin and medium+ acid. Confirming the notes from the nose. The finish is long. Delicious. This was an outstanding showing. Dark Ruby with aromas of fresh black fruits, complex with sweet spice. On the palate flavors of black cherry and blackberry flavors with notes of cacao, oak and toasty spices. Bought at the winery after tasting in 1999, my first pilgrimage to Coonawarra. Opened very stinky but blew off with air over 30 mins to beautiful fragrant nose and that sweet soft tannin of an aged Coonawarra Cabernet. Drank gloriously over the next two hours. So seamless and delicious. We had 3 forty year olds at dinner so this was a birth year wine for the majority of our dinner. Last had a couple years ago, and this remains very good.
