I love how a really great saison plays tricks on my mind. The nose can smell a bit heavy with a ton of funk, spice, malt/wheat, and flowers. Then initially the palate is big with a bunch of flavor and some bitter bite, but as it finishes it is all integrated into a beautiful clean dry finish just begging for another sip. I just could not get my hands off this Red Mountain single vineyard Syrah.
The delicious ripe black fruit core is still pretty much intact while it continues to complexity and nuances. Rich and delicate at the same time on the palate. The bottle is hitting its strike right now.

I believe I mentioned it before but this is such a great wine. This is like a good glass of Meursault. Full bodied and rich. Pairing so nice with ham, salcicio or figues.

Comprised of 100% Chardonnay grapes and aged for an impressive 7 years sur lie (many of the world’s top Grand Cru Champagnes age for a similar length of time on the lees) this champagne displays rich & focused flavors and aromas. White peach, apricot, lime peel & kumquat to name a few. Overall, there’s an elegant intensity like no other in recent memory that I recall hence making this grand cru stunningly spot on.
