Pop and pour. Notes from Day 2 open (in the fridge overnight). On the nose: green apple, lemon, lemon oil, a suggestion of noble reduction (which didn't appear yesterday). Still very primary. On the palate: racy acidity, a cut of steel almost, good denstiy, grapefruit, lemon, lemon oil. Seems more unyielding on the palate than my prev btl. Dense and tangy finish. Tight & closed with dark black currant, graphite, cracked pepper, green bell pepper and an animalistic whiff. With time more fruit comes to the front but also some bay leaf, the graphite turns into stony minerality.
On the palate this is tightly wound around a core of pure black fruit and graphite & iron minerality. Amazing energy & power yet in a closed, quiet way. Gloved. Terrific depth. Love the cloves & bay leaf & rocky minerality in the super long finish.
This is quite profound - and is so very young.

Mostly 19. Yogurt covered cherry, baked pear, mandarin orange, orange pith, caramel, vanilla, yeasty but not overly so. So concentrated and rich at less than 5g/L dosage. Beautiful stuff. — 4 days ago
