This Champagne is almost all Ay Grand Cru, with a small amount of Mutigny 1er Cru blended in. The Pinot of Ay is special- it not only has the black cherry power of steep, south facing vineyards, but also more chalk drive than any other Terroir for this variety. With our beer batter snapper it cut like a Mesnil wine, and then fattened up nicely after dinner.
