WNH Sonoma Coast Pinot tasting.
I decanted this for almost two hours, consumed half, and then sealed and came back to it two days later.
Strawberry everything, for the most part. Strawberry preserves topped with some black pepper, sage, lots of floral notes, and currant. Acidity is really nice on the palate, with a lifted profile yet rich. Not full on kirsch, but some added ripe black raspberries, plum, and herbal spice toward the finish. When I came back to this a few days later, it was much more expressive and had just a kiss of orange zest. Obviously young, but fun to try. I’d hold another 3+yrs, or decant for a couple hours. — 10 days ago
Another Awesome Aubert! A bit more yolky and less minerality than the Lauren but still tons of back end grip and a lovely long finish. It’s dense to start and thick with flavor but the looooongg finish brings nuance. Great straight up but on snowy Friday with Salerno style spaghetti and egg it was perfect. — 16 days ago

Distiller notes It's hard to believe, but yes, this is a sherry oak cask rested vodka. And it tastes just like you'd expect it to. Rich Olorosso and very well made vodka combine remarkably well. This begins as Source One's excellent estate made oat vodka and is then rested for 20-30 days in wet Spanish Olorosso casks. It picks up a ridiculous amount of color and flavor in that time and the rich texture of the vodka carries it perfectly. — 13 days ago
Extraordinary Riesling. Expressive nose of white flowers and honey and dried apples and old river rocks sticky with honey. The palate is bone dry, like an old conch shell full of grilled herbs. Nervy and chalky and electric and delicious. Made for a pour pairing with a spicy vodka sauce due to the intense, martini-like dryness. — 16 days ago
