At the intersection of natural and traditional is Cos. There is a nod to the old world and nothing is overly avant garde or boundary pressing. It’s also fresh, unfaulted, unadulterated. Always pleasurable balance of bright red fruit and earthy damp forest floor - without too much crunch or sour.

Color of ruby, a bit cloudy. Nose of cranberry, red cherry, spice, a bit flowering note, tobacco leaves, and a bit medicinal note. Taste of cherry, good acidity, some flowering note, some juicy sweetness, mellow tannins, and indeed more sweet fresh berry note. Aftertaste is a bit short with some spice and more juicy grapes. Sciare Vive Sicilia Carricante 2017

Wow. Predominantly carricante (with a field blend of minnella, inzolia, grecancico, and catarratto), this Sicilian white from the slopes of Mt Etna is truly unique. Deep golden hue, the wine has aromatics of violet, ash, and maybe even some iodine if you can believe it. The almost red-like quality extends to the palate, which is rich and voluptuous with evolving flavors that echo the nose. Dropping the temp a bit really brings out the latent acidity and creates great balance to support a lingering finish. Absolutely terrific wine. — 20 days ago

Not bad. I personally prefer the Roscato because it has a hint of sweetness while this wine has more of a tart flavor but nonetheless I wouldn’t mind having this bottle around. I also prefer it chilled over warm — a day ago

Contrada Porcaria Etna Rosso 2016

From one of our favorite producers in Italy, this is a nerello mascalesi from the slopes of Mt Etna in Sicily. A small production version of their main wine, this is a bit young right now but opened up beautifully in the glass over 30-40min. An amazing complement to the seared waygu filet (and probably the best waygu I’ve ever had at any restaurant. Ever.). Run...don’t walk...to Fiola in Washington, DC (and ask for Jennifer, one of the sommeliers here who totally knows her shit when it comes to Italian wines). Just a fantastic evening! — 4 hours ago

Rosso di Verzella Etna Rosso Nerello Blend 2016

This Sicilian wine smells and tastes like Burgundy with a volcano. The nose carries earthy-yet-floral notes on a mineral base. The palate is not like Pinot Noir, but not like Sangiovese, either. It paired much better with the involtini than it did with the tomato sauce spaghetti. I guess the grape blend - Nerellos Mascalese and Cappuccio - like eggplant better. It showed a bit of brown around the edge, not something you see often in a young wine. — 13 days ago
