A 💤 giant. One barrel made. Herbaceous nose. Very powerful and that at 12%!!! Coiled and ready to pounce in 10 years from now - for expert tasters only. Not drinkable nor try-able or ready for the classic consumer. Difficult to taste and evaluate. A collectors wine. Intoxicating intense cherry nose. Super fine morello cherries in the glass, cherry aux de vie and yes almonds, very astringent (way too young) with incredible fine tannins. Lime, black tea and barely noticeable thyme. — 6 months ago
Most delicious of the lineup. It really clicked for me, makes me understand how low toast oak can jive with a restrained, pristine sauv blanc character that’s the house signature. Enough air coaxes out apple and a hint of ginger, but it’s that equilibrium between fruit, oak, lees and structure that strikes the match — 2 months ago

Nose: sweet roses.
Palate: delicious. Long. Really good. Perfect fruit. Nice balancing minerality . Some brioche as this opens. Pleasant hint of bitterness.
Terrific change of pace wine. Had with cucumber salad and pastrami salmon and a side of celery with blue cheese sauce.

Willie Carter
Pure crystalline in the glass with effusive perlage. Energetic and vibrant immediately. Tension and drama from sip one. A distinct chalkiness runs throughout this along with yellow flowers and toasted nuts on the nose. Vanilla creaminess and peaches. There’s a slightly ethereal salinity here which is wonderful.
Pure Chardonnay from Mesnil. Aged for five years. There’s a semi sweet quality but the acidity is still beautiful and zippy. Fresh and lively but a decant does this champagne well. After an hour or two the palate will present vivacious citrus fruits and some wonderful chalk. Apples and lemons with pears and just a touch of peaches. Long and gorgeous.
