Popped and poured; enjoyed over the course of an hour. The 2021 “Fourchaume” pours a straw color; medium viscosity. On the nose, the wine is youthful with pineapple popsicle, lemon curd, and steely minerals. On the palate, the wine is dry with high acid. Confirming the notes from the nose. The finish is long and refreshing. This is a beautifully balanced, elegant Chablis with intense minerality. It’s drinking well now but I expect it will be lovely well past 2031. 2021 vintage. Excellent, entry-level producer into the vagaries of (red) Burgundy. Things only ramp up (SUBSTANTIALLY!!!) from here. 1er Cru juice in the bargain section. Focus, concentration, depth and subtlety all found within. Pick up a half-case or more for guilt-free, current pleasure. Underrated. — 2 months ago
