Entry-level white wine from the good sisters of the Monastero Suori Cistercensi in Vitorchiano, under the tutelage of Paolo Bea. Blend of Trebbiano (45%), Malvasia (35%), and Verdicchio (20%) from organically-farmed vines rooted in volcanic soils. Fermented in stainless steel with indigenous yeasts and about 1 week of skin contact. Rich, ripe, complex nose, with aromas of pear skins, apricot, honey and notes of iron and herbs (fennel).
