For us good wine making comes down to two simple words: elegance and finesse.In this case it means not pumping the wine till it almost bursts just because you can, but to balance it perfectly. The acidity is there. The power is there. The spice is there. The fruit is there.

Gorgeous nose of spice, violets and stunning black and red cherry. All on a bed of minerals. Amazing perfume. 9.6. nose. Palate is juicy and classically lean out of the gates but this will gain impressively with air. Wonderful sweetness and such nimble tannins. Just so silky. Heavenly. Wow. Really silky and sweet now after some hours. Overnight this got even sweeter, silkier and more dramatic. — 2 years ago

Stunning nose. Allspice, tart red fruits, cranberry, cardamom, clove, very Xmas vibes. Gorgeous earthy sweet spice as well. Palate is terrific. So elegant, sweet and intense yet nimble. Incredibly precise fruit (mid season cherry, sweet strawberry and a hint of black cherry) and terrific freshness, energy and cut. So pure and sappy. But remains nimble and svelte. Velvety tannins and high acids make this a Pinot geek’s dream. Such a good slowly building finish. Tremendous balance and awesome purity. — 6 years ago

Jürgen von der Mark’s first sparkler and astonishing. Extra Brut Blanc de Noir, 2 g/l dosage, no severity. Nose of brioche, phyllo dough, pastry shell, minerals, then lime zest, sea air and unseasoned raspberry. The mousse is the star: absurdly fine, $75 Champagne level. Juicy, sapid, pure, with acid, fruit and bubbles placed perfectly. Long, fanning finish that keeps getting more complete. So fucking well-made. 9.5, almost 9.6. — 17 hours ago
