I just unlocked a new terrific pairing I didn't think would work ever. This simple Chablis and light soy sauce. It works incredibly well together! There is something about the texture and the saltiness of sauce that is well complemented by the minerally structure of the wine. I'm amazed! I had this along veggie Japanese gyoza and light soy sauce.
The nose is textbook chablis: lemon, lemon curd, chalk, even some pineapple notes pop up here and there. The palate is light, with some juicy lemon touches, a great acid drive, some good grip and a lemony, lively finish that lasts for a while. It's a coop but they work very well.
