The 2021 Napa Cabernets I’ve had so far have been outstanding. It is still early, but I think it could be in the conversation for vintage of the century for Cabernets.

The 21 Onda as with all the Onda Cabernets are a blend of all three of their holdings (Lotus, Helms, Hershey. They also source Sauvignon Blanc from Crystal Springs) and this one is very well made. Excellent; structure, fruit and showing some of the Rutherford dust on the finish with 20% of the blend coming from Rutherford.

Give this one 10 years plus.

Great pumpkin offering as usual! Pie crust and pumpkin pie spice offering on the nose to appease the gourds; orange pekoe celestial reflections. Cinnamon stick whittled for whipping, and nutmegs just made for licking. Great taste for a knife carved face of caramelized pumpkin! Naysayers be slain. Haters haunted, Geeks begouled, Smarms smitten. How else can you mark the seasons in Florida? Red gold body with a Matisse sketched white ring and merengue peaked, sheet-lacing. Clean citrus nose exhibiting clementine and dried pineapple, Meyer lemon and a faint funky-persimmon and lotus. There is something pleasant about the naturalness of the aromatics here with dried lemon verbena and Calloway seed. Orange and tangerine eclipse the lemon on the palate and add sweet grapefruit, and a clove note that tightly binds the whole. The bitterness being mitigated by the maple was brilliant here! Makes the Dogfish 90 seem clunky in comparison. I am a fan of this manifestation. Careful crafting and a simple solution to tune aggressive hops. There is no maple flavor btw. .

Scents of blackberry, black currants, bramble. Black fruits, dark chocolate, tobacco flavors. Dry, but the tannins have mellowed. so much depth. The finish went on and on. Outstanding! — 4 years ago

Extreme value.
BF that knows wine: There are wines that you’d only date and there are wines you’d want a relationship with and this is a relationship wine.
Not too fussy, very consistent, medium bodied but with some spice. Financial goals are aligned. Not a trophy wife wine - but someone you’d be proud to introduce to your friends .

Me: 👀 idk what that’s description is about bc I’m in this relationship and those characteristics don’t describe me. But my thoughts: I’d buy again and it pairs well with White Lotus. I’m going to bring it to my “2023 intention setting dinner” with a group of girlfriends. Will update if it pairs well with intentions. — 2 years ago
