Always 100% Chardonnay, the 2013 ‘Le Reve’ is a tour de force from this storied Carneros house. The mousse here is highly refined. Salted biscuit aromatic tones grab your attention with Meyer lemon zest and shades of wild mushroom and toasted hazelnuts all take shape in the glass. The silly mousse is downright incredible. Bright kumquat zest and sourdough bread tones mingle with macadamia nut and suggestions of white truffles on this complex palate. This is salty and savory California sparkling wine at its best. Gamay / Pinot Noir Blend - Light, fruity, and fresh; with a nice salivating acidity. Aperitif wine, also on dishes usually dedicated to white wine (fish). Raised on volcanic soils, the tannins are fuller than usual on this type of blend.

I always struggle with rose champagnes. Somehow they don't convince me and almost never justify the price tag. But there are a few which I am satisfied with.
Cuvee Elisabeth is definitely in my top list. Its first vintage is 1988 and was created as a counterpart to another prestige cuvee of the house Nicolas François.
This cuvee is about the elegance and finesse rather than the power. Made of equal parts of Chardonnay and Pinot Noir it is blended with less than 10% of red wine from old vines in Mareuil-sur-Aÿ.
Chic rose color with copper hue. Reductive style with a cooler 2007 vintage showing through. Apricot jam, candied citrus, sugar powdered red berries. Delicate bitter cool and dry finish. Disg. in Feb 2019 after spending impressive 11 years on lees. The dosage of 6 g/l is enough to reach the perfect balance.

Big, beautiful, rich mouthfeel with excellent viscosity. Beautiful & well polished. Golden raisins, green & golden apple, candied, sour lemons, lemon meringue, dry apricots, yellow peach, lime candy, cream, vanillin, warm caramel, candle wax, honeycomb, melted white butter, shade of herbaceousness, chalk, saline with white spring flowers, greens & withering yellow florals. Cool shower acidity. The balance is excellent as is the consistent, persistent finish that sits on the long-set as white spice with understated spice, heat and great alluvial limestone minerality.
