Every year I look forward to our little allocation of these beauties from Jerez. The wine has such a giving nose of flor and white fruit that it seems almost like it would be sweet. In the mouth this is all chalky cut, certainly one of the driest wines on the planet that can still provide so much pleasure. It was fatally easy to drink with tuna stuffed peppers!

Love the oxidative notes the extra aging lends this wine. Tomme rind, old apples, cellar floor. Great grip. The perfect aperitif: it can be pounded or pondered.

Fall 2012 release. Salty almonds and peanut skins. Finish for days. Less freshness and pop after a few years of bottle age. But mellowness and complexity abound. Only negative critique is that the alcohol is a bit aggressive on the nose. But it's not an issue on the palate. Who says Fino doesn't age well?
