N:Peaches! yeasty bread, Oranges, a whiff of the sea.
P: So smooth, Oranges and almonds. Caramel. Great acid balance. Nice chalk underlying it.

A single vineyard or “ Pago “ 9K from the Atlantic, In Sanlucar de Barrameda. Andalucia, Spain. Palomino Fino grown there since the 1800’s at least.
4 years under flor.
N: Very oxidative w the sea, vanilla in the background.
P: The creamiest semi salty 15° dream of the sea.,so easy going down, all the rough edges worn off. Slight kick of wood and vanilla. But old, not a kick in the face.
At15°, a wee bit dangerous in it’s innocence.
Come back after a day in the fridge, it’s got a heady/heavy marzipan nose that hits your palate bone dry. A wonderful juxtaposition of worlds. Still has that briny finish so nice in Manzanilla and long.

Nose is fascinating this year. I get cucumber, mint, then citrus, and ocean. Palate is lemongrass, flowers, cucumber, a bit of heat, and lingering acidity. Will see how this years evolves. — 19 days ago
Very lovely drink! Really good balance. It’s a bit delicate so needs to go with lighter fare. We had it with Thai Chicken and it got a bit lost. But by itself was very enjoyable. Only 12.5% alcohol adds to drink ability. — 8 days ago

Palomino harvested from Carrascal vineyard in four passes during the season. Grapes exposed to sun for approx. 4 hrs to elevate sugars, no fortification necessary. Vintages prob-2013-2017 Saca iv.
N: Old wooden boats, tinned peaches, iodine, the sea baby!, Hazelnuts,Orange and lemon rinds, wax, petroleum, …
P:Oranges and peaches, So delicate, some wood, tactility seductive, Viscous yet refreshing.preserved citrus. The “ inner mouth energy” is tremendous.
Not overly oxidative, I could go on.
