El Candado Sherry Pedro Ximénez

Rich, unctuous, dried figs and butterscotch. Almost overwhelming.

Awe inspiring PX from one of the most relevant producers. Super sweet with so much savory complexity underneath.

Together with Lustau's "San Emilio Solera Reserva" this is one of the most concentrated PX I have come across. At around 400 g/l of residual sugar this is liquid dessert.

Paired with Belgian Chocolate and Hazelnut Palet.
So Christmas has passed but this take you back in an instant with intense pudding flavour.

Cloying sweet but excellent of its type. Too sweet for me.

You will want to pour this over pancakes or ice cream.

I Love PX. Raisins, walnuts, chocolate, toffee.

Sweet as can be, but incredibly layered: dates, dried mission figs, raisins, prunes, dried apricots, molasses, brown sugar, chocolate, balsamic syrup, Worcestershire, tamari reduction, etc.

Ridiculous plastic lock gimmick aside, this is a well priced dessert sherry. Good depth.
