👃Powerful:Smoke, dark fruit. Meaty. Horse sweat. Musky. Earthy. Florals. So much going on
👅Sweet red & dark fruits with smoke & earth. Fresh. Solid acidity. Mellow tannins. Full bodied but lithe. Drinking well 🙌
Remaining wine Slow Decanted in my refrigerator
DAY 7
👃Smoky, musky, horsey with red/dark fruit & kirsch
👅Cranberry/raspberry, smoke, bacon, iron, spice, & stones
Hitting all of the notes on DAY 7 but I preferred the unbridled 🐎 intensity of DAY 1

-Lots of Old World character from this Christophe Baron wine that is part of the Cayuse stable
-This was the first vintage of Sur Echalas Grenache so it will be interesting to see the trail it blazes with more bottle age🍷

Nose of blackberry and mulberry together with Margaret River herbaceousness. Charred oak notes as an accompaniment not dominating. Medium weight palate with a degree of elegance. Touch of astringency. Could have done with more mid palate fruit. Drink remaining 3 bottles in next few years. Definitely the most palatial cellar door and grounds in Margaret River and a must visit in a trip to the region. No expense spared. — 5 years ago
2005 vintage. Decanted and open for 3.5 hours before tasting. Intense and spicy richness in the frontal palate/gums. Harmonious the rest of the journey. Very very close to opening the door to the hall of mirrors and entering the "zone" of optimal drinking. Still pretty youthful and no rush to crush. At least two decades of gorgeous enjoyment ahead. Even the greatest wines change themselves in the looking glass. 5.17.23. — 2 years ago
I can’t overstate my love for the Cordier stable in the 1980s and this reinforces that passion. From a 375 ml bottle in a Gabriel Glas Gold, savory leather and a streak of mint play off brooding dark currant to deliver fine depth. It initially seemed a little dilute, but 30 minutes of air brought out the fine tannin and acidic structure it needed to frame the flavors. While fine on its own, it really took off when paired with a prime ribeye. A terrific final red for this challenging year. — 4 years ago

Huge -not we was amazing. Notes of rose petals and dark fruit and berries. A hint of hibiscus. Drinking really well still tons of life left. The last bit - perfumed and elegant - the rest will wait another 5-10 years. Really fun to drink. — a month ago
