Newish vintage, 600 cases produced. 94/6 blend of Grenache Blanc and Roussanne from three vineyards: Boushey (81% GB), Weather Eye (13% GB), Olsen (6% R). Pale yellow white, excellent clarity. Floral, vanilla and mild aldehydic barnyard aromas. Guava, lactic flavors, tropical fruit finish (banana then coconut? But this ain’t no Piña colada). Lingering cherry and heavy (skin and seed) tannic aftertaste . This is either serious experimental winemaking, or ultra craft-focused ‘blanc de noir’, or is this just their iteration of a pale “orange” wine? Massive tannins for a “white” wine. Not a wine for the faint of heart. Dry, just enough acidity, fruity but still pondering this one... The trop fruit flavors backed off, with cherry and other red fruit and Grenache character flavors emerging after 30-60 minutes. Tannins also softened somewhat, with patience — 4 years ago

Nose has ripe plum, crushed dark chocolate, moist fig, slight vanilla and dried violets.
Palate has dried blackberry, eucalyptus, ripe plum, blueberry/cinnamon, dehydrated cherry with mostly resolved tannins. Long finish.
Decanted +4H at the time of notes, but improving with more time...a delicious bottle still.
Paired with Chuck Eye steaks from Kinderhook Farm (Valatie, NY); honestly the best (local) beef source in the Berkshire (MA) / Columbia (NY) County areas. Grilled in a mere 12m to perfect 135° centers. I think the Chuck cut for a steak is quite under rated; it's incredibly moist and tender with it's incorporated fats that just fall apart under high heat.
I fell to the same fate on this bottle as the prior a few years back, perfectly clean cork but extracted in 3/4 & 1/4 status. Should use the Durand for subsequent bottles. — 3 years ago

Tried this again about 8 months later. Sentinel Cabernet Sauvignon is named for the shield-shaped block that casts a watchful eye on the entrance to Monte Rosso Vineyard. Deep Ruby with aromas of rich dark fruit, cedar and sweet spice. On the palate flavors of ripe cherry, blackberry and currants with vanilla oak and toasty nutty notes. Fine soft tannins, well balanced with acidity, long finish ending with berry fruit, cacao and toasty vanilla oak. Nice! — 2 years ago
