Really enjoyed this saignée. Paired with beef tartare.
Exclusively from Meunier coming from the oldest lieu-dit Les Bouts de la Ville. 144 hours cold pre-mentation maceration. Unlike most of Mousse wines, fermented in barrel, no malo.
36 months on lees, 2,5 g/l dosage.
Top class rosé.

It has been a yr and half of more since I’ve had the Launois Veuve Clemence. Still enjoy this quite a bit but I sense the 8g’s dosage more now versus the 2-6g’s dosage that I have gravitated.
It shows orange citrus blend, lime pulp, lemon zest to chiffon, grapefruit with pith, Bosc pear, red apple, pineapple, tropical melons, kiwi, white spice, gritty chalk, crispy volcanics, dry river stone, saline, sea fossils, limestone marl, notes of frothed whole milk, graham cracker crust, yellow & white flowers, jasmine mixed in greens, lively, crisp acidity, very well balanced, complex, good tension/structure and elegant finish that lasts minutes and long sets on spice and minerals.
100% Blanc de Blanc, Grand Cru vineyards in Le Mesnil-sur-Oger and spent almost five years on lees, founded in 1872 and has passed through 8 generations.
If you go to Champagne, try & get an appointment. They have a huge historical champagne museum that is amazing.
