This 2000 spent an incredible 15 years on lees. Bottled in 2017. This cuvée is roughly 2/3 Pinot Noir and 1/3 Chardonnay. Pinot Noir is from the Montagne de Reims - Mailly, Cumières and Vertus. 35% Chardonnay in from the Côte des Blancs (the best region for Chardonnay)- Le Mesnil-sur-Oger, Oger, Avize, Vertus. 10% oak.
The body is thick, heavy and creamy with that much time on lees. The fruit has settled and the complexity has arrived. Bruised apple & pear, a touch of apple cider, pineapple if it were an oil, an array of soft citrus- lemon, lime, orange peel, tangerine, ripe, juicy, yellow peach, some blackberries, marmalade, meringue, cream, malt, some caramel notes, brioche, baguette crust, sea fossils & spray, limestone marl, fine powdery chalkiness w/ speckles of grain, white spice-ginger, withering yellow flowers, excellent acidity, well knitted, perfect tension, balance and a long finish that lasts minutes. — 3 years ago

Nose of pears and lemon pastry. Palate with green apple liquer, and lemon drop. Not overly sweet with a crisp, refreshing finish.

2012, was worried reading online reviews, but this is complex and amazing. Macerated cherries, baked apple crisp, some wood, other herbs and spices I cannot pinpoint. Some chamomile tea notes. All on the nose. Palate is apples initially, buttery bread, more cherries then hits a citrus acidity late that leads to baked apples with spice and vanilla and oat buy it is all balanced by the underlying acidity. There is clearly an oak influence but so well balanced with acidity. Nothing funky on this one despite its color and some online notes. Outstanding and unique. — a month ago
Use to be my fav until having Mailly Grand Cru. It's an unfair comparison, as these two are very different champagnes. I enjoy Moet and appreciate the full flavor and sharp taste. However I'm not sure this will remain my go to. — 4 years ago
Excellent! Clearly Chardonnay, lemon curd, almonds, a berry cream. Palate is big and then ends with a cleansing finish of tart apple, citrus, and saline. So balanced. I really can’t see many people complaining about this one. — 5 years ago
The beautiful pink color is something to behold, but the wine itself is quite impressive as well.
Nose is of strawberry, pear, red cherry, grapefruit, bread crump, and chalky minerals. Gentle and creamy mousse provides an smooth entry, with a medium body that’s broad and penetrating. Lightly spiced and floral finish.

Absolutely wonderful. Hautvillers is the birth place of the monk Dom Pierre Pérignon, who was one of the most influential people involved in the upbringing of Champagne, in the late 1600's up til his death in 1715. It is no surprise that even part of the make up of Dom Pérignon includes high quality Pinot Noir and Chardonnay from Hautvillers, as well as many other grand cru and premiere cru sites such as Ay, Bouzy, and Mailly.
Vintage 2011 - aromatic and citrus nose, with tufts of brioche dough - lively bubbles, pear, quince, vanilla cream puff, and a creamy pallet - spark of acidity mid palate, but not angular, helping give more dimension to the wine. Super enjoyable champagne. — 8 years ago

Killer Champagne! 50/50 blend of Chardonnay from Taissy and Pinot Noir out of Mailly. Dégorgement 07/21. 9 years old, bit oxi but also very fresh. On the nose a bit of port, raspberry yoghurt / danoontje, almonds, lemonrind and great minerality. — 2 years ago
