I have no idea how I made the perfect sandwich for this wine, but I did. Sweet batard, sheep's milk ricotta, sprouted broccoli with lemon, prosciutto. Inspired by lunch last week at the Fatted Calf. Wow. A real stunner. Was all beeswax and white flowers and mustard on the nose and after 15 minutes filled in on mid palate. Was kinda your dream combo of ripe vintage richness and Chablis minerality. Just killed at Lucques tonight! — 8 years ago
