Some awesome things going on with this champagne:
Grand Cru Blanc de Blancs
It's a soft, simple, velvety champagne. Light on its feet with very creamy soapy bubbles, and well applied acidity to clear it away - baked apple, apricot, cinnamon, brioche, flint, white flowers, honeycomb - about 9g dosage, so not on the dry side of Brut, but not near Extra Dry.
Just beautiful juice for the price - it's not toasty and intense, it is a soft and pretty style, but a great example of Chard from Avize - Oger.

What a fantastic BdB ✨ 100% Chardonnay, 60% of which is sourced from Aÿ, and the other 40% coming from renowned Côte des Blancs plots like Avize, Cramant, and Oger. Such suave complexity and depth with a great mouthfeel. Bruised and smoked pear, citrus fruit medley, anise, chalky minerals.

It's sunny and just over 30°F today, so fire in the chimnea time! First flames of 2019.
Nose has warmed pear spread on lightly toasted brioche, lemon curd lite and wet limestone.
Palate has great mineral core surrounded by ripe pear, under-ripe yellow apple and touch of pineapple core.

Another new producer to me. Tasted next to the vintage Paul Goerg, they were very similar, with this one showing a bit more ripeness from the fruit. More lemon dominant with biscuit, orange honey and crushed flower. Thanks @Keith Fisher — 2 days ago
Crisp apple nose and tart pear delicacy on the palate. Small, elegant bubbles and dry. Paired well with salmon; would pair well with light apps/charcuterie. Thinking this would be a great hot-summer-day champagne as it is bright and not sweet, rather than a good toasty champs for winter. — 5 days ago
Jason’s birthday (with his wifey). Stunning presentation. Lovely nose of toasted hazelnuts and baked bread. Palate is energetic. Tilts towards spices with hints of nutmeg and cinnamon. Really nice acid profile with excellent balance and mid palate weight. Delicate minerallity comes along for the ride, and completes what is a polished example. Very impressive. — 5 days ago
Valentines Day tipple on Thursday. Pale Gold with fine bead. Yeasty notes with aromas of Lemon, Apple skin and mineral. On the palate - Powerful, not sweet, acid, reflecting a low dosage of 3g/L. Finishing with a dry chalkiness. A good future assured. — 6 days ago
