Stella Flora Marche IGT 2019

Beautiful wine from Marche. Light skin contact gives a beautiful structure that somehow mimics barrel usage without having the “corrupted” flavor profile.
I somehow had a touch of iodine in the nose, sea shell, sea breeze. I had it decanted and a slight oxidation amplified the mouthfeel. Delicious wine indeed, perfect for gastronomy.

Déjà V Offida Passerina

2020 vintage.
Passerina is an ancient grape grown in Marche in clay and calcareous soil. Fermented in stainless steel with ageing “sur lies” for 4 months.
Fragrant and floral with citrus and honeysuckle on the nose. Dry with medium acidity. Pear, almond and citrus with a savoury, stoney minerality on the finish.
We BBQ‘d local fish.
Ling cod cheeks, Sablefish collars and Chinook Salmon bellies.
