I really enjoyed this wild thing. Rubbery reduction to start, which blew away with a couple of hard swirls in the glass to reveal a beautifully floral and exotic bouquet. With air, it was all elderflowers, chrysanthemum, peaches, pears, some lychees and herbs; and the rubbery notes took on a pleasant flinty edge. Lovely energy on the palate despite being quite autolytic (which was enhanced when we shook up the solids at the bottom of the bottle) and a touch volatile in the backend. Aromas of orange blossom, honeysuckle, grape.
Semi-sweet. Flavors of mineral, lime, pear, honeysuckle, grape. Lovely!
