The standard with cantillon. This is worth trying just for the nose. It explodes out of the glass. Perfume, raspberries, cherries, cream, insane. My last bottle from the Season’s set. 12 year old lambic. Carbonation has faded to maybe 1.5 volumes, almost like cask ale. Not as acidic as I expected, tons of cheese and funk, still rustic as ever with classic lemony funky lambic notes. Excellent, but I prefer this younger. Sweet spot for lambic for me is prob 3-4 years max from release. — 10 months ago
If you like aged champagne, this is the beer to try. Tart, funky barnyard notes mixed with fruit. Sour, but balanced. Belgian treat for sure. — 3 years ago
