Clos Ste. Hune Alsace Riesling

Opened about 30min prior to service. The 2017 Clos Ste. Hune pours a pale straw color with medium viscosity. On the nose, the wine is developing wjth beguiling notes of the perfectly ripe Comice pear, a mix of stone and tropical fruits, lemon blossom, a touch of petrol and minerals. On the palate, the wine is dry with high acid. Confirming the notes from the nose, the finish lasts forever. This is unbelievably balanced and a fantastic pairing with the toro crudo. This is just at the beginning of what’s sure to be a very long drinking window. Enjoy now through 2057.

Cool and focused. Peach and citrus with strong minerality and precision. Calm and excellent

Golden and slightly dry. Refined fruit. Very pure. Some at the table think this is a bit under, but I like how balanced this is

Bright a precise with lemon and petrol and stone. Lovely salinity and floral notes. Dryish compared to German

A whiff of gasoline, tropical fruit, light green notes. Lovely balance. Focussed.

2006. Rich, filtered apple gold. Nose of Bosc pear, baked lemon, warm yellow apple, lemon tart, coconut husk, dry sage, roasted almond, and honey crystal. Palate shows honey flash before flood of lemon juices, lime juice and pith, sweet grapefruit and lemongrass. Sweet at 16, balanced and finishing dry and refreshing!

Oh wow. This is complex, rich and wonderful. Lychee, lemon. Exotic notes and beautiful minerality. Exceptionally long and refined.

All about the precision. Way too young though.

BOOM! Rich pineapple fruit. Creamy vanilla notes. Searing acid. This should go a ways more. Beautiful!

Intense clover honey, ginger cream, lime zest, orange syrup and blossom. Stunning.
