Vouette Et Sorbée

Maison Du XXi Siecle

Les Semblables Boreal Champagne Clandestin

Blanc des noirs. Angular. Terrific aromatics. Mousse is on point. Light brioche, cider notes. Mineral finish. The aromatics stay with you. Cool project from the Vouette & Sorbée folks with some neighbors’ fruit. — 3 years ago

Sobre Extra Brut Champagne 2008

Complicated. Subtle VA and oxidative notes. Lemon juice reduction drizzled over brioche. A bit aggressive and good with aggressive food. Lacks a bit of the midpalate. — 7 years ago

Fidéle Brut Nature Champagne Blend 2014

From magnum. Shows a very light salmon-copper hue. Very tight and reticent on first pour with some lemony citrus notes. With an hour of bottle decant, it’s generously showing red berry fruits, hint of butterscotch and oven fresh croissant. Beautifully long with a wonderful richness for a no dosage. Why is champagne always better from magnum? — 5 months ago

Secret de Sorbée Brut Champagne Blend

9.4

Now we are getting into the serious cuvees at Robin and this is a doozy. What a nose. Insane lime. It’s so so vivid. Green apple skin. Superb minerality and expansiveness. Gorgeous clarity. Really firing on all cylinders. Much more of what I look for. Cheap champagne can be good but I prefer mid range and high end for drinking and selling. Candied but in a super rocky way. The most clear minerality you can imagine. 9.5 nose. What a palate. It’s crazy. I never had anything like it. It’s got a crazy attack and then this elite finesse than low tide waves crashing for 45 seconds finish with superb finesse. It’s crazy wow. Great mouthfeel and wowza acids and freshness. Concentrated but not too much and never heavy. So floats on the palate but has serious structure. Hits you in the molars and stays there. This wine changes like crazy in 10-15 minutes. It’s a total think piece champagne and it’s so unique. Super geeked and super delicious. Bravo. The Sorbee, indeed, does have a secret. Textured and so juicy with such a great three acts. — 4 years ago

I’m new with this producer. Distinct profile with their non-rosé. Need to try this.

@Shay A it’s a very distinct rosé as well. I have liked this even more in the past - not sure if vintage variation or if I held onto this bottle too long and I would have preferred it only a year or two after disgorgement

Extrait Brut Nature Champagne Blend 2008

Disgorged: 3/7/17. Lots of life and depth with light oxidative flavors and precise quince. More bubbles going here than in the 2006. — 5 years ago

A bit fuller and rounder following the vouette. But also delicious. Purity of the fruit comes through. — 6 years ago
