It’s a night of first year consecutive decades, 90 & 80. Enjoyed in reverse order

Still ripe older Bordeaux fruits with smoothed out lead pencil. Blackberries, black raspberries that lean into pudding, black plum, darkest, cooked cherries, raspberries edges, baked rhubarb and hues of poached strawberries. There is nothing that bites back. Dark chocolate, smooth mocha, caramel, soften baking spices-clove, nutmeg, cinnamon & vanillin, old tobacco w/ ash, used leather, dry top soil, limestone powder, black licorice to anise, dry river stone, fresh & withering dark, red flowers, amazing, rainfall acidity and a well; balance, structured, knitted and smartly polished finish that lasts 90 seconds.

Steak slow cooked in the oven at graduating low heats and then seared at 1300 degrees, 30, 30, 30 & 30. .

“The Truth is Inside” is an expression about the very bottom of a bottle of wine. Tannin soaked & it never lies. Typically the best part of the bottle. 93 that lands 94 in truth. I always leave two-three inches of wine in bottle just because it is always slightly better than the rest of the bottle. It is more concentrated.

Wowie holding up great. Thought it was raisiny to start with but it then went in reverse and tightened up with an hour. Really lovely dried herbs, red fruits, sandalwood and a little nag champa. Stellar and super fun to try a 22 year old Pinot. It could be nothing other than California and honestly SLH in particular which is a good thing because Burgundy belongs in burgundy and the Pisoni’s belong in SLH. Bravo — a year ago

Médoc Red Bordeaux Blend 2016

A blend of Cabernet Sauvignon & Merlot (60/40), this is a delicious & inexpensive left bank Bordeaux. I will say that a 30+ minute decant really helped remove some intial reduction.  Afterwards this wine presents black currant & plum with notes of graphite and cigar box with a palate that is medium bodied with just enough well integrated tannins to pair well with reverse seared ribeye steaks alongside rainbow carrots! Drinking at the source…Les Avises restaurant at Jacques Selosse. Home for the weekend at Hoteles Avises.

Bucket list wine for me and it lived up to the hype. I love the Selosse champagnes for their oxidative profile and was curious how a rosé would drink made in that same manner…just a hint of sherry in the glass before an absolute tidal wave of flavor and power. Dried apricot, plum, cranberry and orange marmalade out of the gate. There is a sweet/savory roller coaster showing red flowers and shortbread before a pink sea salt and truffle spice arrives. Texturally, it’s commanding but so cerbreal. If you enjoy Egly Ouriet’s rosé, imagine more depth and complexity and you’ve got it. Stunning rosé and the best rosé champagne I’ve had.
