Popped and poured; enjoyed over the course of an hour. The “Grand Cellier” pours a pale straw color with a persistent mousse. On the nose, the wine is developing with notes of bright, tart fruit: green apple, star fruit, Meyer lemon, a whiff of brioche, and chalky, limestone minerals. On the palate, the wine is dry with medium+ acid. Confirming the notes from the nose. The finish is medium+. I freaking love Vilmart. Drink now through 2038. Disgorged December of 2018. — a month ago

Great tasting tonight. An excellent start with a fantastic bottle of bubbles. Lots of spice from the oak barrels during fermentation. Baking spice and citrus notes come thru nicely. Big finish of tangerine and baking spices. Very elegant. — 9 years ago

Entry cuvée for Vilmart & Cie but still very nice and one I buy in 375ml for restaurant occasions, dinner starter for two.
There are nice Rainer cherries, green apple, Anjou pear, lime pulp, lemon w/ pith, white grapefruit, kiwi, topicals, quince, nice white spice, gritty chalk that presses the palate, brioche to baguette crust, sea fossils-spray, limestone marl, dry volcanic minerals, sunflower & white spring flowers with greens, crisp-racy acidity, nicely balanced with tension and elegant finish that lasts two-minutes and lasts on spice and minerals.
