I don't understand. I've been cellaring this one for more than 5 years, it has a kilo of sediment in the bottle, and it STILL has a Sahara desert of tannins. Despite the fact that I wish I had held on longer, the wine is glorious. Velvety texture with full plum and earth. Black cherry. — 10 years ago
13 years old, a kilo of sediment and still a Sahara desert-worth of tannins in the mouth. I fear for how this wine tasted a decade ago. Could probably age this one another 10 years. That said, it's got fantastic length and nicely intertwined minerals and berries. Not the greatest vintage year, and still I'd call this a good wine. Very brunello-esque. — 11 years ago

This fun bubbly brings the brut. It's Sahara dry, with a strong earthy and yeasty streak running through it. The unusual grape - Trepat - comes on with some of the earthiness of a North American variety, and provides a nice counterpoint to the Pinot Noir. It's my first time to taste Trepat, by the way, and I would do it again. Minerals all over the strawberry aromas and flavors hit very well, and provide food friendliness. Scent of dried pineapple on the nose, with kafir lime on the palate, a good amount of acid, and a slight, slatey finish. 11%abv. This wine is DRY, like Sahara desert dry. I had this with spicy chicken, thinking any inherent sweetness would combat the heat... Wrong! More like adding gasoline to a fire. Bad pairing, good lesson. But I look forward to revisiting this over the next few days, as on it's own it is quite refreshing. Would like to try this with herbed chicken or something else neutral like that. — 11 years ago

Christmas 2014. Paired with apple stuffed pork loin. Jammy fruit and vanilla to the nose, same with a little chocolate on the palate. Affordable wine which I enjoyed.
