Brilliant and red-amber come in at just-translucent showing slightly piebald broiled beef fat foam and eyebrow-expressive, graphic lacing. Woody, with elm and holly and cherry wood, blood orange and ruby grapefruit too, a peppery, meaty complexity. This beer really reminds me of some British ale that I can’t quite pinpoint. Nuttiness. Shelled pecans and dusty walnut, roasted hazelnut, and cigarette paper. Bitterness ion bits defining turn that smacks of savory, chestnut, dry cigar, weak coffee, cinnamon. Interesting twists here, and low fruit and malt reliance. .

Light golden pink, excellent clarity. Red fruit and a hint of herb in the nose. Stone fruit, cherry and later pink grapefruit in mouth, dry, moderate skin astringency that disappears with a bit of aeration. Subtle, nuanced flavors. A nice example of restrained, minimalist winemaking - just shows what's there in the fruit, gentle handling but "whole cluster pressing" (says the label); otherwise, no reliance on added frills like malolactic or heavy skin contact (assuming I interpreted the wine accurately).

Great balance between traditional and modern winemaking with the use of barique and shorter maceration time to create an approachable wine in its youth, while also incorporating the use of large traditional botti.
While there is a presence of new oak, it doesn't dominate and the purity of the Nebbiolo fruit still comes through well. Luscious brandied sour cherry, stewed raspberry, dried violets, rhubarb, cedar, baking spice, black truffle, tar, animal. Delicious. Good acidity and smooth yet structured tannins. Well balanced. Would have rated higher if there was less reliance on new French oak to add structure. Would have been interesting to see how this wine would have tasted with more fine grained tannin from the fruit instead of from wood. Excellent value alternative to barbaresco or Barolo. Labet follows a philosophy of “nothing added, nothing removed” in its winemaking, designed to let the grapes and growing environment speak for themselves without reliance on chemicals or additives like sulfur.
It has a range of products and is revered for its spectacular Chardonnays that are expressive of the mosaic of soil types found across estate vineyard sites.
Tonight, we’re sipping a Chardonnay called ‘Bajocien’ made with grapes grown on vines planted in 1949 on limestone soils with high iron content. Fittingly, ‘Bajocien’ refers to a stage on the geologic timescale associated to the Middel Jurassic period.
The color is gorgeously golden, likely due (in part) to aging 22 months in 228L oak barrels prior to release. Aromas and flavors offer concentrated notes of ripe golden delicious apples, starfruit, melon, with chamomile, crushed stones, cream, frozen pie crust, and pinenut.
