Domaine Labet is a treasured producer of organic and biodynamic wines from the Côtes du Jura AOC.

Labet follows a philosophy of “nothing added, nothing removed” in its winemaking, designed to let the grapes and growing environment speak for themselves without reliance on chemicals or additives like sulfur.

It has a range of products and is revered for its spectacular Chardonnays that are expressive of the mosaic of soil types found across estate vineyard sites.

Tonight, we’re sipping a Chardonnay called ‘Bajocien’ made with grapes grown on vines planted in 1949 on limestone soils with high iron content. Fittingly, ‘Bajocien’ refers to a stage on the geologic timescale associated to the Middel Jurassic period.

The color is gorgeously golden, likely due (in part) to aging 22 months in 228L oak barrels prior to release. Aromas and flavors offer concentrated notes of ripe golden delicious apples, starfruit, melon, with chamomile, crushed stones, cream, frozen pie crust, and pinenut.

It is rich, racy, and textured and completely delicious!!!
