The description: The colour is salmon, light pink rose. The aromas show fresh strawberries, cranberry and hints of white pepper. The palate is where the romance is. The texture is crisp almost crunchy, which brings out the fresh strawberry and red tree fruit characters. This wines truly refreshes the palate… and soul.

Popped and poured; enjoyed as an aperitif prior to dinner. The NV Brut Rosé pours a very pretty pink color with a persistent mousse. On the nose, the wine is developing with notes of raspberry, strawberry, spring flowers, some brioche, lemon citrus and minerals. On the palate, the wine is dry with medium+ acid. The fruit is round in a good way. Balanced. Confirming the notes from the nose. The finish is long and chalky. This is a classy NV Rosé that’s easy for the wine nerd and the crowd to appreciate. Popped and poured from a half bottle; enjoyed over the course of an hour. The “Oeil de Perdrix” is made in the saignée method and pours a pale copper/pink color with a persistent mousse. On the nose, the wine is developing with notes of strawberry, raspberry, pink pepper, lemon, and chalky minerals. On the palate, the wine is dry with medium+ acid. Confirming the notes from the nose. Is there a better rosé out there? Seriously, let me know if you have a suggestion because this stuff is flames and hits at just 11.5 ABV which is arguably the most important quality in a pink wine. — 3 years ago

Medium light salmon pink . Lightly red fruited , strawberry, raspberry , creamy notes as well, touch of baked bread . Some cranberry and redcurrant hints . On the palate quite rounded and fruited , red currant and cranberry , slight toasty , mineral note on the finish . Quite high , piercing acidity , good extract and length .
