Very pretty and on the delicate side. Packaging nails the tasting notes with cucumber, green tea, and melon rind, though I also get the banana that many tasters mention. From a small brewery, and a prefecture known for its pristine water sources. Pair with Kumamoto oysters or scallop sashimi. Environmentally sustainable, energy efficient brewery. Alcohol stands out to me at 15.5%. — 9 months ago
Very elegant balance but not super fruity, given it's daiginjo designation. — 2 years ago
Fruity bright. Made in a daiquiri like cocktail. — 7 months ago

Sake World 2024 Had to judge given it’s the same glass throughout the tasting but favorite of all the pours from this producer. — 5 months ago

Winner of a white burg lineup. Everything is there in balance: nose with citrus, a whiff of floral reduction, a touch of almond sling and grapefruit pith. Palate has vibrant acidity, mouthfeel and a bit of phenolics. Nothing is wow but everything is very good and in balance — a month ago
